When you live on an island in Fiji, fresh fruit is the go-to for a twirly happy hour. We created this bright pineapple cocktail recipe at Tavola Villa on one especially fun evening. It turns out that a ripe pineapple is all that’s needed to spark a festive celebration. As the sun set low, we harvested one such sweet orange pineapple from the garden and gathered a basket of passionfruits from a vine at the top of the property. As luck would have it, our friend George was staying with us at the time. George, who is an upscale bartender and mixologist by trade, concocted the perfect tropical pineapple cocktail recipe for a warm summer evening. It’s gorgeous golden colour, aligned with the solar plexus chakra, is intended to promote creativity, courage and self expression. In house, we call this cocktail Love Island. Prepare to experience island bliss.
Pineapple Cocktail Recipe Ingredients
- 1 Small Fresh Lime
- 50ml Dry Gin
- 10ml Vodka
- ¼ Cup Fresh Pineapple
- 1 Whole Fresh Passionfruit
- 50ml Peach Schnapps
- Splash of Angostura Bitters
Design Note: If you want to elevate your presentation, consider freezing muddled pineapple in an ice cube tray beforehand. Add a few cubes to each cocktail before serving.
Step 1: Muddle pineapple, passionfruit and lime juice in shaker until mixed.
Step 2: Add Dry Gin and Vodka, then muddle again.
Step 3: Add ice to the shaker, along with Peach Schnapps and Angostura Bitters.
Step 4: Shake hard for 6 seconds and strain into a stemless cocktail glass filled with ice.
Step 5: Top with a hibiscus and a bamboo straw for a truly tropical experience.
